Mary-Claire's Layette


Green Chile Cheese Quiche



Mary-Claire says that this is very yummy and foolproof!


Melt 1/3 C butter in 9 x 13 pan in oven.  Allow to cool a bit.


Beat 10 eggs in large bowl.  (Can use ½ Egg Beaters)
Add ½ C flour
1 tsp baking powder
dash of salt
Pour cooled melted butter into egg mixture.  Leave butter coating on pan. Do not scrape.


Add 2 - 4oz cans chopped green chiles, drained
16 oz carton small curd cottage cheese
½ pound Monterey Jack cheese, grated.


Mix well.


Pour into buttered pan.  Bake 350 degrees for 30 minutes.


Can be baked ahead.  Can be frozen and reheated.

Variations:  Add diced ham or bacon bits.  Vary the cheese.

Hats!


After Mary-Claire and Marguerite attended Vogue Knitting LIVE in Chicago last year, they came back with both inspiration and yarn from Debbie Macomber, author, knitter, and World Vision's Knit for Kids International Spokesperson.

Folks in Las Cruces started knitting and hats began to pile up. Mary-Claire wanted us all to see the results before they were mailed away. So did her cat, seen here guarding the little hats.

Gini Wilbur's Spice Cake

2 cups self-rising flour
2 cups sugar
1 cup Wesson Oil
3 eggs
1 tsp. ground cloves
1 tsp. cinnamon (more is optional)
1 cup chopped nuts (more are optional)
1 cup applesauce

Mix flour, sugar, eggs, and oil by hand. Add the remaining ingredients and continue to mix by hand until well blended.

Spray and flour a bundt pan. Pour in batter. Bake at 350° for 50 - 60 minutes. Do not over bake.

Shrimp Mold

2 - 8 oz. packages of cream cheese
1 can of tomato soup
Worcestershire sauce
Salt and white pepper

1 cup Hellman's Real Mayonnaise
1 1/2 packets unflavored gelatin
1 1/2 cups chopped cooked shrimp
1 cup chopped celery
1 cup chopped onion

Mix cream cheese and tomato soup together; add Worcestershire sauce, salt and pepper to taste. Stir to blend, bring to a simmer. Remove from heat and add the remaining ingredients. Mix well. Pour into mold and refrigerate until cold.
